Sandwiches & Quesadillas

A delicious creamy and spicy dip that can be used as a dip or a spread!
Ing:
2 8oz blocks of cream cheese
1/2 tsp lemon pepper
1/3 tsp garlic powder
1/3 tsp onion powder
6 oz jarred jalapeno peppers and the juice
16 oz pack of frozen spinach (squeezed dry)
Method:
Start by putting the cream cheese in a food processor then add the jalapeno peppers and the juice blend it a little then go ahead and add the lemon pepper, onion powder, and the garlic powder as well as the squeezed spinach, blend all the ingredients one more time till everything has combined. Do a taste test to make sure it is perfect for you, spread on crackers, sandwiches , or just use it as a dip for vegetables and pretzels!

A delicious homemade fajita, that is easy to put together for a great back to school lunch or a simple snack!
Ing:
1/4 green bell pepper cut in thin slices
1/4 red bell pepper cut in thin slices
1/4 yellow bell pepper cut in thin slices
1 small onion thinly sliced
enough chicken to make as many fajitas as you like
1 tsp ginger and garlic
1 tsp lemon pepper
1 tsp of black pepper
salt to taste
1/2 a lime
Tortillas as many as you need to make
Method:
First clean and cut the chicken in long slivers and keep it aside. In a frying pan add about 1 tbsp of olive oil and once hot add the vegetables and stir fry then keep that aside once the onions become a little translucent. Keep all this aside, then in the same pan add 1 tbsp of olive oil and add the chicken as well as the ginger, garlic, salt, pepper, and lemon pepper. Cook it until the juices run clean and splash it with half a lime juice. Start assembling the tortillas by warming the tortilla a little bit of vegetables as well as the chicken, add your favorite sauce and you have a healthy delicious homemade lunch or snack!

A delicious tasty filling, waiting to be filled in your favorite pastry, buns or sandwiches.
Ing:
3 to 4 cups boiled or raw potatoes
1/4 to 1/2 tsp cumin seeds
1/2 tsp turmeric
1 tsp crushed peppers
1 tsp lemon pepper
1/2 tsp chilli garlic sauce
11/2 cups frozen peas and carrots
1 tsp of ginger and garlic puree
1 tbsp oil
salt to taste
3 to 4 lime leaves (optional)
3 to 4 curry leaves
fresh chopped cilantro (optional)
Method:
In a pot add the oil, once that heats up add the cumin seeds, once they start sizzling add the ginger and garlic and saute for a little while then add the curry leaves and the lime leaves. Next add the carrots and peas and saute it for a while, make sure that the carrots and peas are completely cooked through before you add the boiled potatoes, if the potatoes are raw than it’s fine adding it together so they cook up together, Next add the sambal, lemon pepper, crushed peppers and the turmeric, stir till all the ingredients are combined, add the salt and do a taste test, add the coriander leaves and cover till the peas have completely softened. You are now ready to use it in your favorite dish!

A homemade flakey pastry with a great taste and no preservatives!
4 cups white flour
1 lb unsalted butter
1/4 to be used for binding dough
3/4 to be used to wrap around the dough
pinch of salt
1 tsp fresh lime juice
2 cups cold water
Method:
In a big bowl add the flour, lime juice, and 1/4 of the butter and rub the flour with the butter really well, than add approximately 2 cups cold water and bind the dough. Let the dough rest about ten minutes. After 10 min the dough should be in a ball, put it on a cutting board and slice in a cross making sure you don’t cut all the way through, next add the butter in the middle and wrap the dough around the butter, flatten it really well and roll it in a 5 in wide and about 24 inches long then fold it and turn it the opposite way put flour again and roll again and fold it put it in the fridge for about 20 min. After 20 min take the dough out and roll again, fold it two times then put it back in the fridge for another 20 min and roll once more and fold twice. It should be folded twice each time with a total of 6 folds after every two folds in should be refrigerated for 20 minutes. After rolling it the last time cut the pastry into two and score it this should give you two pastries with 24 pastries in each, giving you a total of 48 homemade pastries. This can be frozen up to 6 months!

This is my mom’s specialty sweet crispy coleslaw with savory shredded meat on a soft hamburger bun!
Ing:
Hamburger Buns
For the meat
1 tbsp Olive Oil
1 tsp fresh Ginger
1tsp fresh Garlic
1/2 tsp Mustard seeds
1/2 tsp Cumin seeds
1 tsp Green Chutney
1/2 tsp turmeric
4 to 5 Curry Leaves
Sambal Chutney (optional)
2 cups boiled Meat
1 tsp Tomato paste

Salt to taste
Fresh ground Pepper to taste
Coleslaw Ing:
1 to 2 16 oz bags of Coleslaw mix
2 tbsp sugar might need more depending on your taste
1/2 cup fat free Sour cream
1/2 cup Mayonnaise
Sambal chili sauce per your taste

Make the coleslaw and leave it on the side so it gets nice and soft.
In a pan heat the olive oil and add the mustard seeds until they pop, now go ahead and add
all the other ingredients and let cool! than put them in hamburger buns and enjoy!
